Dinner and a Movie: I See a Dark Stranger

St. Patrick's Day is the holiday that keeps on giving. We ended up with a fair amount of leftovers, so what could be better than Corned Beef Hash? I'd never had it before, but Modern Meal Maker suggests making it like potato cakes, so there was no argument here. The scallions in the champ and the saltiness of the corned beef really make this dish. Yum! We ate it two nights in a row with a green salad.

Corned Beef Hash

2 tablespoons lard
1 cup chopped cooked corned beef
1 1/2 cups leftover champ
flour, for dredging
4 poached eggs, to serve

Serves 2

Heat the lard in a skillet over medium to medium-high heat so it gets hot but doesn't smoke. Meanwhile, combine the beef and potatoes and form into four patties. Dredge them in flour and fry until browned on each side. Top each with a poached egg that's been seasoned with salt and pepper.

Adapted from "Corned Beef Hash" in Martha Meade, Modern Meal Maker (San Francisco: Sperry Flour Company, 1935), 322.

Naïvely patriotic Bridie Quilty (Deborah Kerr) travels from her small Irish hometown to Dublin in order to join the IRA. Rejected, she falls in with a Nazi agent (Raymond Huntley), relocates to England and finds another way to act on her hatred of the English. On a mission to free a Nazi spy from prison, Bridie seduces British officer Lieutenant David Bayne (Trevor Howard). Bridie starts to think the British might not be so bad after all...

This is such a fun movie and is quite suspenseful in places. It should be--it's director is Frank Launder, who wrote the screenplay with Sidney Gilliat. They're the screenwriting team behind The Lady Vanishes and Green for Danger. Launder also directed Two Thousand Women. I See a Dark Stranger is available on DVD.

Keep an eye out for David Tomlinson, Katie Johnson and Joan Hickson.

  1. I would like to talk about the movie, but once again...the food grabs all my attention! This looks like such a delicious hash recipe. The way Andy usually makes it is with diced potatoes, carrots, onions, etc. mixed with the corned beef, but this looks really tasty, too.

    1. I'll have to try it that way next. We've still got a good amount of corned beef left.

  4. My ex-husband was a great fan of corned beef hash. Perhaps that's enough reason for me not to like it much. Except that I do like a taste of it at the diner. I've never made it at home.

I'm thinking about it though if it would be as delicious as your recipe shows.

  7. I have such bad associations with corned beef - I've only ever encountered it as a very processed, tinned, cheap school dinner, experienced in my childhood. It was baaaad. I didn't realise it could actually be something so delicious (as seen on your previous post) and this looks amazing!

The film looks great too - another one I hadn't heard of.

  8. This looks absolutely DIVINE! It's a bit like corned beef hash, have you ever tried Stovies? I was bonkers about a Scottish guy once and him and his equally Scottish flat mate made me Stovies once which was just about the most delicious lump of food ever! I bet you could find a wonderful recipe amongst all your books...
